{"id":241,"date":"2008-06-30T13:38:06","date_gmt":"2008-06-30T17:38:06","guid":{"rendered":"http:\/\/thisfoodthing.wordpress.com\/?p=241"},"modified":"2008-06-30T13:38:06","modified_gmt":"2008-06-30T17:38:06","slug":"summer-fruit-bruschetta-with-banana-bread-and-cream-cheese-vanilla-sauce","status":"publish","type":"post","link":"http:\/\/thisfoodthing.com\/index.php\/2008\/06\/30\/summer-fruit-bruschetta-with-banana-bread-and-cream-cheese-vanilla-sauce\/","title":{"rendered":"Summer Fruit Bruschetta with Banana Bread and Cream Cheese Vanilla sauce"},"content":{"rendered":"<p style=\"text-align:left;\">Another simple fruit recipe, perfect for breakfast, brunch or dessert.\u00a0 Change out the fruits seasonally, and you&#8217;ll be surprised at the variation of flavors you can come up with.<\/p>\n<p style=\"text-align:center;\">\n<p style=\"text-align:center;\"><a href=\"http:\/\/thisfoodthing.files.wordpress.com\/2008\/06\/raspberries.gif\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-242 aligncenter\" src=\"http:\/\/thisfoodthing.files.wordpress.com\/2008\/06\/raspberries.gif?w=300\" alt=\"\" width=\"300\" height=\"261\" \/><\/a><\/p>\n<h2>Summer Fruit Bruschetta with Banana Bread and Cream Cheese Vanilla sauce<\/h2>\n<p>The sauce:<\/p>\n<p>3 ounces cream cheese, softened<br \/>\n1\/4 cup brown sugar<br \/>\n2 teaspoons vanilla<br \/>\n1 dash of cinnamon<br \/>\n1 cup yogurt (plain or vanilla)<\/p>\n<p>Combine the cream cheese, brown sugar and vanilla.\u00a0 Blend well &#8212; easier if using a hand mixer, but will come out smooth with just a bit of elbow work.\u00a0 Add the yogurt and mix until smooth.\u00a0 Refrigerate for 1\u00a0 hour.<\/p>\n<p>1 chopped Banana<br \/>\n2 fresh peaches or nectarines, chopped<br \/>\n1\/2 cup fresh raspberries<br \/>\n1\/2 lime<br \/>\n4 slices of thick banana bread<\/p>\n<p>Prepare the fruits, combining the bananas, peaches and raspberries in a bowl.\u00a0 Mix in the lime juice and refrigerate (up to 2 hours).<\/p>\n<p>Once you are ready to serve, plate the banana bread, with pile of the mixed fruit on top, and a drizzle of the vanilla cream cheese sauce.\u00a0 Serve immediately.<\/p>\n<p>Some variations<\/p>\n<ul>\n<li>Toast the banana bread just prior to serving<\/li>\n<li>I&#8217;ve not had banana bread in the house, and have substituted this with cinnamon flavored bagels, or cinnamon bread.<\/li>\n<li>Sprinkle finely chopped pecans over top, after the sauce is drizzled on<\/li>\n<li>Make this fall inspired by using apples, raisins and walnuts, and\u00a0 use pumpkin bread.\u00a0 Add a bit of fresh (canned) pumpkin to the sauce<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Another simple fruit recipe, perfect for breakfast, brunch or dessert.\u00a0 Change out the fruits seasonally, and you&#8217;ll be surprised at the variation of flavors you can come up with.
