More apple goodness!!\u00a0 As I said in the last post, it&#8217;s Autumn, and apples are everywhere, especially here in New York.\u00a0 Any market, be it a super-market, a small local market, or the farmers markets are full of dozens of different kinds of apples, everything from Gala to Jonathan and Golden Delicious ..and everything inbetween.<\/p>\n<p>With the abundance of apples, I went through all my recipes, and though I will post some of my own as the season progresses, I found this recipe &#8212; The Official New York State Apple Muffin &#8212; in the files.\u00a0 The subheading states: <em>&#8220;The apple muffin was adopted as the State muffin in 1987 as a result of the efforts of elementary students throughout New York State.&#8221;<\/em> I actually recall making this recipe with my son when he was in 3rd grade, at the school with his classmates.\u00a0\u00a0 It&#8217;s a good recipe, and as muffin recipes go, simple to do.<\/p>\n<p>I am making these tomorrow, again with my son &#8212; he&#8217;s in 9th grade now &#8212; and I know we&#8217;ll have fun making them, and even more fun eating them.\u00a0 Knowing him, these won&#8217;t last too long, either ;)<\/p>\n<div class=\"mceTemp mceIEcenter\">\n<dl class=\"wp-caption aligncenter\">\n<dt class=\"wp-caption-dt\"><a href=\"http:\/\/thisfoodthing.files.wordpress.com\/2008\/09\/applemuffins.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-328\" title=\"applemuffins\" src=\"http:\/\/thisfoodthing.files.wordpress.com\/2008\/09\/applemuffins.jpg?w=300\" alt=\"Apple muffins cooling on a rack\" width=\"300\" height=\"225\" \/><\/a><\/dt>\n<\/dl>\n<\/div>\n<h2>Official New York State Apple Muffin<\/h2>\n<p><span style=\"text-decoration:underline;\">For the Topping:<\/span><br \/>\n1\/2 cup walnuts<br \/>\n1\/2 cup brown sugar<br \/>\n1\/4 cup flour<br \/>\n1 teaspoon cinnamon<br \/>\n1 teaspoon lemon peel, grated<br \/>\n2 tablespoons melted butter.<\/p>\n<p><span style=\"text-decoration:underline;\">For the Muffins:<\/span><br \/>\n1 cups New York State Empire Apples, peeled, cored and chopped<br \/>\n2 cups flour<br \/>\n3\/4 cup brown sugar<br \/>\n1\/2 cup sugar<br \/>\n2 teaspoons baking soda<br \/>\n1\/2 teaspoon salt<br \/>\n1 1\/2 teaspoon cinnamon<br \/>\n1\/2 teaspoon ground cloves<br \/>\n1\/8 teaspoon ground nutmeg<br \/>\n1\/2 cup raisins<br \/>\n1\/2 cup walnuts<br \/>\n3 eggs, beaten<br \/>\n1\/2 cup butter, melted<br \/>\n4 ounces cream cheese, softened and cut into small pieces<br \/>\n1\/2 teaspoon vanilla<\/p>\n<p><span style=\"text-decoration:underline;\">Topping:<\/span><br \/>\nCombine the ingredints for the topping and set aside.<\/p>\n<p><span style=\"text-decoration:underline;\">Muffins:<\/span><br \/>\nCombine apples, raisins, walnuts, eggs, butter, cream cheese, and vanilla.<\/p>\n<p>Add in the dry ingredients a little at a time to the apple mixture.\u00a0 Stir until just combined.\u00a0 Do not over mix.<\/p>\n<p>Portion the batter into lightly greased and floured muffin tins, (or use muffin papers).\u00a0 Sprinkle the muffins with the topping, and bake at 375F for 20-25 minutes.<\/p>\n<p>This recipe makes about 2 dozen muffins.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Woot!!
