{"id":490,"date":"2008-11-11T10:25:23","date_gmt":"2008-11-11T14:25:23","guid":{"rendered":"http:\/\/thisfoodthing.wordpress.com\/?p=490"},"modified":"2008-11-11T10:25:23","modified_gmt":"2008-11-11T14:25:23","slug":"acorn-squash-with-cranberry-and-apples","status":"publish","type":"post","link":"http:\/\/thisfoodthing.com\/index.php\/2008\/11\/11\/acorn-squash-with-cranberry-and-apples\/","title":{"rendered":"Acorn Squash with Cranberry and Apples"},"content":{"rendered":"<p>I love the mix of apples &amp; cranberries.\u00a0 The pair just seem to go together so well.\u00a0 A Thanksgiving recipe that includes them together is always the first thing I seem to try.\u00a0 This recipe was shared with me a few years back on Thanksgiving &#8212; after I had eaten as much as possible ;)<\/p>\n<p>The original recipe called for soaking the cranberries in &#8216;grape juice&#8217;, but that just seemed so odd to me.\u00a0 I then experimented with cranberry juice and orange juice.\u00a0 Both work really well.\u00a0\u00a0 See below for some variations.<\/p>\n<h2>Acorn Squash with Cranberry and Apples<\/h2>\n<p>2 acorn squash<br \/>\n6 tablespoons butter, melted, divided<br \/>\n1\/4 cup dried cranberries<br \/>\n1\/4 cup cranberry juice (or orange juice)<br \/>\n3 medium apples<br \/>\n1\/4 cup brown sugar<br \/>\n1 tablespoon lemon juice<br \/>\n1 teaspoon cinnamon<\/p>\n<dl class=\"wp-caption alignright\">\n<dt class=\"wp-caption-dt\"><a href=\"http:\/\/thisfoodthing.files.wordpress.com\/2008\/11\/acorn-squash.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-491\" title=\"Acorn Squash\" src=\"http:\/\/thisfoodthing.files.wordpress.com\/2008\/11\/acorn-squash.jpg\" alt=\"Acorn Squash\" width=\"143\" height=\"109\" \/><\/a><\/dt>\n<\/dl>\n<p>Prep the squash by cutting it in half, and cleaning out the seeds &amp; strings.\u00a0 Brush the top<\/p>\n<p>with melted butter.
