{"id":647,"date":"2008-12-08T21:08:07","date_gmt":"2008-12-09T01:08:07","guid":{"rendered":"http:\/\/thisfoodthing.wordpress.com\/?p=647"},"modified":"2008-12-08T21:08:07","modified_gmt":"2008-12-09T01:08:07","slug":"easy-cherry-almond-white-chocolate-fudge","status":"publish","type":"post","link":"http:\/\/thisfoodthing.com\/index.php\/2008\/12\/08\/easy-cherry-almond-white-chocolate-fudge\/","title":{"rendered":"Easy Cherry Almond White Chocolate Fudge"},"content":{"rendered":"<div id=\"attachment_648\" style=\"width: 290px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-648\" class=\"size-full wp-image-648\" title=\"White Chocolate Chips\" src=\"http:\/\/thisfoodthing.files.wordpress.com\/2008\/12\/whitechocolatechips.jpg\" alt=\"White Chocolate Chips\" width=\"280\" height=\"280\" \/><p id=\"caption-attachment-648\" class=\"wp-caption-text\">White Chocolate Chips<\/p><\/div>\n<p>December has always been the time to make all those delicious recipes you&#8217;ve saved up for the Christmas season.\u00a0\u00a0 And this, in my house, is one of those.<\/p>\n<p>I first had cherry almond fudge at my Mothers house one year when we were there for Christmas.\u00a0 She had purchased it from a local candy maker, and didn&#8217;t have a recipe.\u00a0 Once I was back home in New York, I did a search and came up with the following recipe.<\/p>\n<p>I&#8217;ve never really changed it, though I do add a bit more chopped almonds. And I have had to substitute white chocolate chips for regular chocolate chips, as well as &#8220;white candy making disk&#8221; like things I found at a craft store in the candy section.<\/p>\n<p>This recipe takes about 10 minutes to prep, and a minimum of 2 hours to cool, so it is relatively quick.\u00a0 I really like to individually wrap each piece in candy foil, which makes a great presentation.<\/p>\n<p>Enjoy!<\/p>\n<h2>Easy Cherry Almond White Chocolate Fudge<\/h2>\n<p>2 cups or 12 ounces white chocolate chips<br \/>\n1 can (14 ounces) sweetened condensed milk<br \/>\n1\/2 cup almonds, chopped<br \/>\n1\/2 cup candied cherries chopped<br \/>\n1 teaspoon almond extract<\/p>\n<p>Use an 8&#215;8 square pan &#8212; Spray with pam, and then line with parchment paper.\u00a0 Alternativly, you can line the pan with the non-stick foil that is on the market nowadays.<\/p>\n<p>Mix the chocolate and milk together, and then microwave on high, stirring every 30 seconds until the chocolate is smooth.<\/p>\n<p>Stir in the almonds, cherries, and almond extract.\u00a0 Pour the mix into the pan.\u00a0 Chill for at least 2 hours, but best after at least 6.<\/p>\n<p>Lift out the fudge, or turn out onto a cutting board.\u00a0 Remove the paper or foil, and cut the fudge into 1 inch squares.<\/p>\n<h3>Notes:<\/h3>\n<ul>\n<li>I like this with extra nuts &#8211; up to 3\/4 cup chopped almonds<\/li>\n<li>IF you can&#8217;t find white chocolate chips, replace them with chocolate chips, or white candy discs.<\/li>\n<li>Hand wrap these in candy foil wraps.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>December has always been the time to make all those delicious recipes you&#8217;ve saved up for the Christmas season.\u00a0\u00a0 And this, in my house, is one of those.
