{"id":80,"date":"2007-07-08T19:59:36","date_gmt":"2007-07-08T23:59:36","guid":{"rendered":"http:\/\/thisfoodthing.wordpress.com\/2007\/07\/08\/gluten-free-bread\/"},"modified":"2007-07-08T19:59:36","modified_gmt":"2007-07-08T23:59:36","slug":"gluten-free-bread","status":"publish","type":"post","link":"http:\/\/thisfoodthing.com\/index.php\/2007\/07\/08\/gluten-free-bread\/","title":{"rendered":"Gluten Free Bread"},"content":{"rendered":"<p>Holly asked for gluten free bread..and here is a recipe that my friend Mark uses.\u00a0 I&#8217;m unsure of his source, but I know he&#8217;s used this recipe for a couple of years.<\/p>\n<h2>Gluten Free Bread<\/h2>\n<p>1 cup of brown rice flour<br \/>\n1 cup almond flour<br \/>\n3\/4 cup white rice flour<br \/>\n1\/4 cup tapioca flour<br \/>\n2 1\/2 teaspoons xanthan gum<br \/>\n1 teaspoon salt<br \/>\n2 teaspoons instant yeast<br \/>\n2 eggs<br \/>\n2 tablespoons honey<br \/>\n2 tablespoons\u00a0oil<br \/>\n1 teaspoon vinegar or lemon juice<br \/>\n1 &#8211; 1\u00a0 1\/2\u00a0 cups warm water<\/p>\n<p>Mix together in the dry ingredients, using a whisk to mix well.\u00a0 In a second bowl, mix the eggs, honey, oil, vinegar or lemon juice, and the first cup of water.<\/p>\n<p>Mix until it is thick &#8212; should be as thick as pancake mix.\u00a0 Add additional water as needed to reach the &#8220;pancake mix&#8221; consistency.<\/p>\n<p>Grease and flour a bread pan, and pour the mixture into it, allowing it to rise for about 45 minutes, or until it is about 3\/4 of the pan high.\u00a0 Heat the oven to 350 degrees F, and bake for about 30 minutes or so.<\/p>\n<h3>Notes:<\/h3>\n<ul>\n<li>Mark also uses this recipe to make pizza.\u00a0 It&#8217;s been a while, and he isn&#8217;t around to ask, but I know from my notes on this recipe that he added a bit of extra oil to the batter, and then oiled the baking pan quite a lot., allowing the dough to rise sightly before baking at 400, for 10-12 minutes.<\/li>\n<li>Add dried fruits, nutmeg, cinnamon (re-hydrate the fruit slightly by soaking these in very hot water for about 5-7 minutes).<\/li>\n<li>Add cinnamon and raisins, or cinnamon and dates (doing the same to the fruits..re-hydrate slightly by soaking these in very hot water for about 5-7 minutes.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Holly asked for gluten free bread..and here is a recipe that my friend Mark uses.\u00a0 I&#8217;m unsure of his source, but I know he&#8217;s used this recipe for a couple of years.
